^^^ may be you guys call 'hili bath' for something else, but that is what we call for that 'crispy partially roasted rice layer' in Kandy.

You learn something everyday. My idea of 'Hili Bath' was stale rice.

Do you really have to cook it in a clay pot to make it 'hili hath'.
So what do you call old rice cooked in a rice cooker?

Exactly,..
Cook rice for dinner,.... leave it in the rice cooker overnight,... by morning it's heal bath,...
I agree with Pawan,.. It's called Diya bath,..it tastes much better if you have burned chillies added, but the problem here is we don't have open flames to burn dried chillies, and it's painful when the pungent smell comes out,...
There are dried, smashed rice in Indian stores (Can't remember the name),... you can eat them as 'Habala Pethi',... which is add some coconut, salt and sugar,...
Good for the breakfast than those cereal....

AnuD,

You are talking about DAN-KUDA.

Usually, dun-kode is not served and leave in the pot. Next day, whole thing is called hili-bath. So dan-kode is a major portion of hili-bath. I guess, rice undergoes some chemical reactions, if we left over night and make it delicious. I never observed this special taste with aluminum pots. Do you?

Gonooo,.
Habala pethi is a long story,..
Once the paddy harvest is taken into the house, people go to the paddy field and collect the remaining small amount of harvest.
They separate the seeds/grain, soak in water overnight and crush them in the 'miris gala' or Wangediya to get 'Thalichcha Rice' then they remove the paddy husk to collect Habala pethi,...
Add some sugar, salt and coconut,... eat for the breakfast...
Here what we have is ready made habala pethi, all you need is to prepere and eat,... Just like cereal...

I think 'heal bath' came because we eat it in the morning. we call alms we give to temples in the morning as 'heal dana'.
